Coconut Cream Chocolate Mousse by Dr. Myers.

I absolutely LOVE this dessert. I have it every single day, I modify it slightly, skip the cocoa powder, add different berries, add cocoa nibs for crunchiness. My kids love it, it is sweet, satisfying and so good for you!  I just mix it very well with a fork.

Ingredients:
1 can coconut milk chilled in fridge overnight
1 Tbsp unsweetened cocoa powder
1/2 tsp vanilla extract
5-10 drops stevia (optional)
1 pinch cinnamon
1 pinch sea salt
fresh berries (optional)
unsweetened coconut flakes (optional)

Servings: 1
Instructions
Skim off the top layer of coconut cream and place in bowl, leaving behind the watery layer in the bottom.
Using a hand whisk or electric mixer, beat the coconut cream into desired texture. If you would like, you can reserve some white cream before adding cocoa, to top mousse before serving.
With a spoon, mix in cocoa, vanilla, stevia, cinnamon, and salt. Put in serving bowl.
Garnish with berries, coconut flakes, or the reserved coconut cream. Enjoy!
